Baked Cheesy Chicken Flautas

Baked Cheesy Chicken Flautas are great easy recipe for your next Mexican Fiesta. They bring loads of flavor with just a few ingredients.

Yield: 32 FLAUTAS

✅ INGREDIENTS

  • 3 pounds chicken breasts, cooked and shredded
  • 1/2 cup salsa
  • 8 oz cream cheese
  • 1 cup fiesta blend cheese or Monterey Jack, shredded
  • 1 tsp cumin`
  • salt and pepper, to taste
  • 16 burrito-sized flour tortillas

✅ INSTRUCTIONS

  1. Preheat oven to 400 degrees F. 
  2. In microwave-safe bowl, combine shredded chicken, salsa, cream cheese, shredded cheese, cumin, salt and pepper. Microwave mixture 2-3 minutes until cheese is melted and chicken is heated through. 
  3. Spoon about 3 tablespoons for chicken mixture on bottom third of each tortilla. Roll up tightly and cut in half. Place each Flauta seam-side down on rimmed baking sheet. 
  4. Spray chicken flautas with cooking spray. Bake 18-20 minutes until flautas are crispy. 
  5. For party presentation, place flautas on a baking sheet in a ring shape, adding shredded cheese between each layer. (Place a small bowl in the middle of the ring while you lay out your flautas but remember to remove the bowl before baking.)  Bake additional 5 minutes to melt the cheese.

KEY TO SUCCESS #1 – MAKE FLAVORFUL CHICKEN
I like to make Salsa Chicken in the Instant Pot.

Salsa Chicken is a combination of boneless skinless chicken breasts and salsa that is pressure cooked until it’s tender and perfect for shredding.

You can also make Salsa Chicken in a slow cooker. Or you can make Salsa Chicken using a sous vide cooker.

I actually made Salsa Chicken sous vide and it turned out great. I’ll be sharing that recipe with you very soon.

If you already have some shredded chicken, you can use that in this recipe and just add a half cup of you favorite type of salsa, either homemade or store bought.

KEY TO SUCCESS #2 – MAKE THEM CHEESY
Cream cheese is an important cornerstone of these Cheesy Chicken Flautas.

The cream cheese along with the fiesta blend cheese adds a great creaminess and lots of flavors.

Fiesta blend cheese is usually a combination of Monterey Jack, Cheddar, Queso Quesadilla, and Asadero cheeses.

You can use just Monterey Jack or just cheddar if you’d prefer.

Really, just about any type of cheese will work in this recipe.

KEY TO SUCCESS #3 – USE BURRITO-SIZED TORTILLAS
The amount of flautas made by this recipe and the amount of chicken to put into each tortilla is based on using a burrito-sized tortilla.

You’ll need to adjust the amount of filling if you use a different sized tortilla.

With burrito-sized tortillas, you’ll roll the tortilla up around the chicken mixture then cut each one in half.

You’ll use 16 tortillas and you’ll end up with 32 flautas.

KEY TO SUCCESS #4 – SPRAY WITH COOKING SPRAY BEFORE BAKING
As you roll up and cut the flautas, line them up on a rimmed baking sheet. I used a half-sheet pan and 36 flautas filled up about 1 1/3 pans.

Next, lightly spray the flautas with non-stick cooking spray. This little bit of oil will help the flautas get crisp as they are baked.

You could also brush the flautas with a little olive oil.

KEY TO SUCCESS #5 – MAKE MORE … OR LESS
This recipe can easily be doubled if you need to make more flautas. Or you can half the recipe if you need less flautas.

These Cheesy Chicken Flautas make great leftovers too. They can be reheated in the oven, in the microwave or in the air fryer.

MAKE IT A PARTY
Cheesy Chicken Flautas are a great dish to take to a party. You can make a pretty Pull-Apart Chicken Flauta Ring by arranging the chicken flautas in a ring and adding more shredded cheese between the layers.
Tip! Place a small bowl in the center of the baking pan and arrange the flautas in a circle around it. Remove the bowl before baking.
