This cake came about as a need to use a couple of left over apples. I am also trying to reduce the amount of saturated fat in our diet and hence the oil substitution for the butter. This batter is thinner than most cake batters and sneaks in under the apple slices when you pour it on and hence gives a thin layer between the apples and the bottom of the baking dish and makes an incredible crust. A dusting of powdered sugar is all you need .....
✅ INGREDIENTS
For the cake:
- 3 eggs
- 1 1/4 cups cake flour
- 1/2 cup oil (flavorless oil like canola/vegetable oil)
- 1 cup sugar
- 1 1/4 tsp baking powder
- 1 tsp vanilla
- 2 tablespoons cornstarch
- 1/4 tsp salt
For the apple filling:
- 2 apples
- 1 1/2 tsp cinnamon
- 1/2 cup brown sugar
✅ INSTRUCTIONS
- Peel, core and thinly slice apples lengthwise. Place apple slices in a bowl and add the sugar and cinnamon to it. Combine well to coat all apple slices with the sugar and cinnamon.
- Grease a 7" x 11" glass baking dish with butter/non stick spray. Line the bottom of the dish neatly with the apple slices and keep aside.
- Preheat the oven to 350 F and adjust oven rack to middle position. Sift the cake flour, baking soda, salt and cornstarch.
- To prepare the cake batter, in a bowl, break the eggs. Using electric beaters/mixer beat the eggs on high speed till light and fluffy. The color of the eggs becomes lighter the more you beat them. After about 3-4 minutes of beating, add the sugar and continue beating the mixture till the sugar is well mixed and the mixture regains its fluffiness.
- Stream in the oil and vanilla essence and continue beating till well mixed - another couple of minutes.
- Add the dry mixture to this mixture a little at a time and continue to mix with beaters or you can fold by hand. The only thing to keep in mind is to not over mix the batter as this can result in a tough cake.
- Pour the finished batter into the cake pan with the apple slices and cover them completely.
- Bake for 45-50 minutes or till a skewer/cake tester inserted in the center of the cake comes out clean.
- After the cake has finished baking, keep it on a wire rack for 5 minutes after which it should be removed from the baking dish or it might stick to its bottom. To take the cake out of the pan, loosen the edges with a knife and then gently invert the cake onto the rack.
- Sprinkle with powdered sugar. Serve warm or at room temperature.
