Rainy Day Chocolate Chip Cookies
These chocolate chips are thick and chewy and full of semisweet chocolate chips. Just perfect for a rainy day!

Yield: 40 COOKIES

INGREDIENTS

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/4 cups all-purpose flour
  • 2+ cups semisweet chocolate chips
  • 1 cup chopped pecans

INSTRUCTIONS

  1. Preheat 350 degrees F.
  2. Cream together butter, sugar, and brown sugar. Add eggs and vanilla. Mix in baking soda, salt, and flour. Stir in chocolate chips and nuts. Drop by cookie scoop onto cookie sheets. 
  3. Bake for 11 minutes until lightly browned around the edges.

The weather has changed in central Oklahoma today.

Yesterday was close to 70 degrees, but we only got into the 50’s today before the temperatures started falling again.

The changing weather brought with it some rain and possible sleet and snow later tonight.

Baking cookies on rainy days is a family tradition so the kids and I made chocolate chip cookies this evening.

When I started getting the ingredients out of the pantry, Noah came into the kitchen with his hand out.

What do you think he wanted? Chocolate chips!

When I make chocolate chip cookies, I like them to be chewy and FULL of semisweet chocolate chips and nuts.

No thin and crispy cookies for me.

I like to use a cookie scoop to drop the dough onto the cookie sheet.

I think it makes it so much easier.

In between batches, I keep the bowl of dough in the refrigerator.

Cold dough helps the cookies hold their shape better and not spread as much.

This evening, I was cooking hamburgers while we were baking the cookies so I asked Emily to get the bowl of cookie dough out of the refrigerator and put them on the cookie sheet.

I turn around and she’d gotten the bowl of cookie dough out of the refrigerator and set the bowl on top of the cookie sheet.

Not what I meant! Haha.

It didn’t take her long to realize what I was asking her to do.
